Ingredients

  • tablespoons olive oil
  • onion, finely chopped
  • carrots, sliced
  • stalks celery, sliced
  • cloves garlic, minced
  • zucchini, diced
  • red bell pepper, diced
  • 400 grams canned diced tomatoes
  • liter vegetable broth
  • 400 grams mixed beans, rinsed and drained
  • 100 grams whole wheat pasta
  •  Handful of fresh basil, chopped
  •  Salt and pepper to taste

Instructions

  1. 1 Heat the olive oil in a large soup pot over medium-high heat.
  2. 2 Add the onion, carrot, and celery and cook until the vegetables are soft, about 10 minutes.
  3. 3 Add the garlic, zucchini, and bell pepper and cook for another 5 minutes.
  4. 4 Add the diced tomatoes, vegetable broth, and beans. Bring the soup to a boil.
