Healthy Kale Mash

Sweet potato replaces regular potatoes for an extra boost of vitamin A and fiber, while kale gives you a powerful dose of vitamin K and C. It's easy to make, and perfect for those cold winter days. Ingredients

500 grams of kale, washed and finely chopped

500 grams of sweet potatoes, peeled and diced

1 onion, chopped

2 cloves of garlic, minced

1 tablespoon of olive oil

salt and pepper to taste

100 ml of skimmed milk

1 smoked sausage, sliced

Heat the olive oil in a large pan and sauté the onion and garlic until soft.

Add the sweet potatoes and a little salt. Cook for a few minutes until they soften slightly.

Add the kale to the pan. Stir well to ensure everything is mixed. Add a little water, cover the pan and let it simmer for about 20 minutes until the kale and potatoes are soft.

While the mash is cooking, fry the smoked sausage in a separate pan until it is nicely browned and crispy.

Once the kale and potatoes are cooked, add the milk and mash everything into a creamy mash. Add salt and pepper to taste.
