Healthy Mango and Coconut Mousse

Ingredients

  • ripe mangoes
  • can of coconut milk (400 ml)
  • tablespoons of honey
  • teaspoon of vanilla extract
  • gelatin leaves
  •  Coconut flakes and fresh mint leaves for garnish

Instructions

  1. 1 Soak the gelatin leaves in cold water for about 5 minutes.
  2. 2 Peel the mangoes and cut them into pieces. Put them in a blender.
  3. 3 Add the coconut milk, honey, and vanilla extract to the blender and blend until smooth puree.
  4. 4 Heat a small amount of the mango-coconut mixture in a saucepan. Squeeze out the gelatin leaves and dissolve them in the warm mixture.
  5. 5 Add the gelatin mixture to the rest of the mango-coconut mixture and blend briefly.
  6. 6 Divide the mousse into four glasses and refrigerate for at least 3 hours to set.
  7. 7 Garnish with coconut flakes and fresh mint leaves just before serving. You have now created a beautiful and flavorful dessert.
