Ingredients

200 grams quinoa

400 grams black beans (canned, rinsed and drained)

200 grams sweet corn (canned, rinsed and drained)

2 ripe tomatoes, diced

1 large avocado, diced

1 red onion, finely chopped

1 red bell pepper, diced

juice of 2 limes

2 tablespoons olive oil

1 teaspoon cumin

salt and pepper to taste

fresh coriander, finely chopped (for garnish)
Instructions

Cook the quinoa according to the instructions on the package, drain and let cool.

In a large salad bowl, combine the cooked quinoa, black beans, sweet corn, tomatoes, avocado, red onion, and red bell pepper.

In a small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper to make the dressing.
