Ingredients

  • 200 grams quinoa
  • 400 grams black beans (canned, rinsed and drained)
  • 200 grams sweet corn (canned, rinsed and drained)
  • ripe tomatoes, diced
  • large avocado, diced
  • red onion, finely chopped
  • red bell pepper, diced
  •  juice of 2 limes
  • tablespoons olive oil
  • teaspoon cumin
  •  salt and pepper to taste
  •  fresh coriander, finely chopped (for garnish)

Instructions

  1. 1 Cook the quinoa according to the instructions on the package, drain and let cool.
  2. 2 In a large salad bowl, combine the cooked quinoa, black beans, sweet corn, tomatoes, avocado, red onion, and red bell pepper.
  3. 3 In a small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper to make the dressing.
  4. 4 Pour the dressing over the salad and toss well to combine everything.
