Healthy Quinoa Salad with Avocado and Chickpeas
A fresh, nutritious and easy to prepare quinoa salad. Packed with healthy ingredients like avocado, chickpeas, and fresh vegetables. Perfect for a light lunch or as a side dish for dinner.
Ingredients

1 cup quinoa

1 ripe avocado

1 can chickpeas

1 red bell pepper

1 handful cherry tomatoes

1 cucumber

Handful of fresh basil leaves

2 tablespoons olive oil

Juice of 1 lime

Salt and pepper to taste

Thoroughly rinse the quinoa under cold water and cook it according to the package instructions. Let it cool afterwards.

Cut the avocado, bell pepper, cherry tomatoes, and cucumber into pieces.

Rinse the chickpeas and put them in a large bowl.

Add the chopped vegetables and cooled quinoa to the chickpeas.

Make a dressing with the olive oil, lime juice, salt, and pepper. This adds extra flavor!

Pour the dressing over the salad and mix well.
