  • cup quinoa
  • ripe avocado
  • can chickpeas
  • red bell pepper
  • handful cherry tomatoes
  • cucumber
  •  Handful of fresh basil leaves
  • tablespoons olive oil
  •  Juice of 1 lime
  •  Salt and pepper to taste

Instructions

  1. 1 Thoroughly rinse the quinoa under cold water and cook it according to the package instructions. Let it cool afterwards.
  2. 2 Cut the avocado, bell pepper, cherry tomatoes, and cucumber into pieces.
  3. 3 Rinse the chickpeas and put them in a large bowl.
  4. 4 Add the chopped vegetables and cooled quinoa to the chickpeas.
  5. 5 Make a dressing with the olive oil, lime juice, salt, and pepper. This adds extra flavor!
  6. 6 Pour the dressing over the salad and mix well.
