Ingredients

  • whole wheat lasagna sheets
  • onion, chopped
  • cloves of garlic, minced
  • zucchini, diced
  • red bell pepper, diced
  • eggplant, diced
  • can of diced tomatoes (400g)
  • 200 g ricotta cheese
  • 50 g grated Parmesan cheese
  • tablespoons olive oil
  •  Salt and pepper to taste

Instructions

  1. 1 Preheat the oven to 200 degrees.
  2. 2 Heat the olive oil in a large pan and sauté the onion and garlic.
  3. 3 Add the zucchini, bell pepper, and eggplant and cook for 5-7 minutes.
  4. 4 Add the diced tomatoes and let it simmer for 10 minutes.
