Ingredients

  • 400 g whole wheat spaghetti
  • tablespoons olive oil
  • cloves garlic, minced
  • large onion, chopped
  • red chili pepper, chopped (optional)
  • 800 g fresh tomatoes, diced
  • tablespoons tomato paste
  • large bunch fresh basil, roughly chopped
  •  Salt and pepper to taste
  •  Parmesan cheese for serving

Instructions

  1. 1 Cook the spaghetti according to package instructions until 'al dente'.
  2. 2 Heat the olive oil in a large skillet over medium-high heat. Add the garlic, onion, and red chili pepper. Cook until soft, about 5 minutes.
  3. 3 Add the diced tomatoes and tomato paste. Stir well and let simmer for 10 minutes.
  4. 4 Add the basil to the sauce. Season with salt and pepper. Let simmer for another 5 minutes.
  5. 5 Drain the spaghetti and add it to the sauce. Stir well until the pasta is well coated with the sauce.
  6. 6 Serve with a generous amount of Parmesan cheese. No stress, it already smells delicious!
