Italian Cannelloni with Spinach and Ricotta

Preheat the oven to 180 degrees.

Heat the olive oil in a large pan and sauté the finely chopped onion and garlic until translucent.

Add the spinach and cook until wilted. Then drain and let it cool.

In a bowl, mix the ricotta, mozzarella, and cooled spinach. Season with salt and pepper.
