Italian Minestrone Soup
A delicious, filling soup full of vegetables and beans, ideal for a warming lunch or dinner. This minestrone is as healthy as it is tasty, so enjoy your meal!
Ingredients

2 tablespoons olive oil

1 onion, finely chopped

2 carrots, diced

2 stalks of celery, thinly sliced

2 cloves of garlic, minced

1 zucchini, diced

400 grams canned tomatoes

1 liter vegetable broth

70 grams spaghetti, broken

400 grams cannellini beans, drained and rinsed

Handful of fresh basil, finely chopped

Salt and pepper to taste

Heat the olive oil in a large pot over medium-high heat. Add the onion, carrot, celery, and garlic and cook for about 5 minutes, or until the vegetables begin to soften.

Add the zucchini and tomatoes to the pot, stir well, and cook for another 5 minutes.

Add the vegetable broth and bring to a boil. Add the spaghetti and let it cook for 10 minutes.

Add the cannellini beans and cook for another 5 minutes. Season with salt and pepper to taste.
