Ingredients

  • tablespoons olive oil
  • onion, finely chopped
  • cloves of garlic, finely chopped
  • carrots, diced
  • stalks of celery, sliced
  • zucchini, diced
  • red bell pepper, diced
  • 400 grams canned diced tomatoes
  • liter vegetable broth
  • 400 grams kidney beans, rinsed and drained
  • 100 grams whole wheat pasta
  •  Handful of fresh basil, chopped
  •  Handful of fresh parsley, chopped
  •  Salt and pepper to taste

Instructions

  1. 1 Heat the olive oil in a large pot over medium-high heat.
  2. 2 Add the onion and garlic and cook for 5 minutes, or until soft.
  3. 3 Add the carrots, celery, zucchini, and bell pepper and cook for another 5 minutes, stirring occasionally.
  4. 4 Add the diced tomatoes, vegetable broth, kidney beans, and pasta. Bring to a boil.
  5. 5 Reduce heat and let simmer for 20 minutes, or until the pasta is cooked.
  6. 6 Stir in the fresh herbs and season with salt and pepper. This will add extra flavor!
