Italian Orzo Risotto with Grilled Vegetables
Who doesn't love a good risotto? We add a little twist by replacing traditional rice with orzo, a rice-shaped pasta. Combined with grilled vegetables and a touch of Parmesan cheese, you have a delicious meal that your friends and family will enjoy. And no stress! This recipe is easier to prepare than you think.
Ingredients

200 grams Orzo

2 Zucchinis

2 Red Bell Peppers

1 Eggplant

4 tablespoons Olive Oil

2 cloves Garlic, minced

1 liter Vegetable Broth

100 grams Parmesan cheese, grated

Salt and Pepper to taste

Preheat the grill to medium-high heat.

Slice the zucchinis, bell peppers, and eggplant into thin slices.

Brush the vegetables with 2 tablespoons of olive oil and grill them until tender. Set aside.

Heat the remaining olive oil in a large pan and add the minced garlic.

Add the orzo and stir well to coat the pasta with oil.

Gradually pour in the vegetable broth, letting the orzo absorb the broth before adding more.

Once all the broth is absorbed and the orzo is cooked, add the grilled vegetables and Parmesan cheese. Stir well until the cheese is melted.
