Ingredients

  • 200 grams Orzo
  • Zucchinis
  • Red Bell Peppers
  • Eggplant
  • tablespoons Olive Oil
  • cloves Garlic, minced
  • liter Vegetable Broth
  • 100 grams Parmesan cheese, grated
  •  Salt and Pepper to taste

Instructions

  1. 1 Preheat the grill to medium-high heat.
  2. 2 Slice the zucchinis, bell peppers, and eggplant into thin slices.
  3. 3 Brush the vegetables with 2 tablespoons of olive oil and grill them until tender. Set aside.
  4. 4 Heat the remaining olive oil in a large pan and add the minced garlic.
  5. 5 Add the orzo and stir well to coat the pasta with oil.
  6. 6 Gradually pour in the vegetable broth, letting the orzo absorb the broth before adding more.
  7. 7 Once all the broth is absorbed and the orzo is cooked, add the grilled vegetables and Parmesan cheese. Stir well until the cheese is melted.
