Mediterranean Quinoa Wrap
A soft wrap filled with crispy vegetables, protein-rich quinoa, and a homemade yogurt dressing. This Mediterranean quinoa wrap is a true explosion of flavors, delicious for lunch or a light dinner. It's also a great way to use up leftover quinoa from the night before.
Ingredients

4 whole wheat wraps

200 g cooked quinoa

1 red bell pepper, diced

1 cucumber, diced

150 g cherry tomatoes, halved

100 g mixed greens

200 g Greek yogurt

juice of 1 lemon

2 tbsp olive oil

salt and pepper to taste
Instructions

Mix Greek yogurt, lemon juice, olive oil, salt, and pepper in a bowl to make the dressing.

Divide the cooked quinoa among the wraps.

Add the bell pepper, cucumber, and cherry tomatoes.

Drizzle the dressing over the vegetables and quinoa.

Place a handful of mixed greens on top of the vegetables.
