Oat Pancakes with Blueberry Compote
Start your day off right with these delicious, nutritious oat pancakes. They are easy to make and the blueberry compote adds a fresh and sweet touch. They are also a big hit with kids. So get out your pancake pan and let's get started!

200 grams oats

400 ml almond milk

2 large eggs

1 tablespoon honey

1 teaspoon cinnamon

2 cups blueberries (fresh or frozen)

2 tablespoons chia seeds

juice of 1 lemon

1 tablespoon maple syrup

1. Put the oats, almond milk, eggs, honey, and cinnamon in a blender and mix until smooth batter.

2. Heat a little oil in a frying pan over medium heat. Spoon some batter into the pan and cook the pancakes until golden brown on both sides.

3. While the pancakes are cooking, make the compote. Put the blueberries in a saucepan with the lemon juice and maple syrup. Bring to a boil and simmer for 10 minutes.

4. Add the chia seeds to the compote and stir well. Simmer for another 5 minutes until the compote has thickened.
