Oat Pancakes with Blueberry Compote

Ingredients

  • 200 grams oats
  • 400 ml almond milk
  • large eggs
  • tablespoon honey
  • teaspoon cinnamon
  • cups blueberries (fresh or frozen)
  • tablespoons chia seeds
  •  juice of 1 lemon
  • tablespoon maple syrup

Instructions

  1. 1 1. Put the oats, almond milk, eggs, honey, and cinnamon in a blender and mix until smooth batter.
  2. 2 2. Heat a little oil in a frying pan over medium heat. Spoon some batter into the pan and cook the pancakes until golden brown on both sides.
