Portobello Burger with Sweet Potato Fries

Preheat the oven to 200 degrees Celsius. Peel the sweet potatoes and cut them into fries. Place them on a baking sheet, drizzle with olive oil, and sprinkle with paprika powder and sea salt.

Bake the sweet potato fries in the oven for about 25-30 minutes, or until golden brown and crispy.

While the fries are baking, brush the portobellos clean and remove the stems. Drizzle with olive oil and sprinkle with salt and pepper. Grill them in a hot grill pan for about 5 minutes on each side, until they are soft and juicy.

Slice the red onion into thin rings and the avocado into slices.

To assemble the burgers, place lettuce on the bottom of the buns, then the portobello, followed by the avocado slices and red onion. Top with the top of the bun.
