Ingredients

  • can of chickpeas
  • zucchini
  • red bell pepper
  • yellow bell pepper
  • 200 g cherry tomatoes
  • tablespoons olive oil
  • teaspoon dried oregano
  • teaspoon dried basil
  •  Salt and pepper to taste
  • 200 g mixed greens
  • tablespoons balsamic dressing

Instructions

  1. 1 Preheat the oven to 200 degrees.
  2. 2 Cut the zucchini and bell peppers into pieces and place them in a large baking dish along with the cherry tomatoes and chickpeas.
  3. 3 Mix the olive oil, oregano, basil, salt, and pepper with the vegetables and chickpeas. Make sure everything is well coated.
