Ingredients

  • 200 g pasta (choose your favorite)
  • cloves of garlic
  • bunch of fresh basil
  • 50 g pine nuts
  • 100 g Parmesan cheese
  •  Olive oil
  • 200 g cherry tomatoes
  • 200 g fresh spinach
  •  Salt and pepper to taste

Instructions

  1. 1 First, cook the pasta according to the instructions on the package. Don't stress, cooking pasta is easy!
  2. 2 While the pasta is cooking, finely chop the garlic and basil. This will add extra flavor.
  3. 3 Toast the pine nuts in a dry pan over medium-high heat until they are golden brown. Be careful, they should not burn!
  4. 4 In a blender, mix the garlic, basil, pine nuts, Parmesan cheese, a splash of olive oil, salt, and pepper until smooth. If you don't have a blender, you can chop and mix everything. It will work out just fine!
  5. 5 Heat a splash of olive oil in a pan and sauté the cherry tomatoes until they soften.
  6. 6 Add the spinach and stir-fry until the spinach is wilted.
  7. 7 Drain the pasta and mix with the pesto, tomatoes, and spinach. Enjoy your meal!
