Ingredients

  • ripe mangoes
  • 200 ml coconut milk
  • tsp agar agar powder
  • tbsp honey
  • passionfruits
  •  Fresh mint leaves (for garnish)

Instructions

  1. 1 Peel the mangoes and cut the flesh into pieces.
  2. 2 Puree the mango pieces together with the coconut milk and honey in a blender until smooth.
  3. 3 Bring the mixture to a boil in a saucepan and let it simmer gently for 2 minutes.
  4. 4 Add the agar agar and stir well.
  5. 5 Divide the mixture into 4 dessert glasses and let it set in the refrigerator for at least 2 hours.
  6. 6 Just before serving, cut the passionfruits in half and scoop out the flesh. Divide this over the mousses.
  7. 7 Garnish with a mint leaf. Your tropical surprise is ready!
