Refreshing Mango-Coconut Parfait

Peel the mangoes and cut them into pieces. Set aside a few pieces for garnish.

In a blender, combine the mango, coconut milk, chia seeds, honey, and the seeds from the vanilla bean. Blend until smooth.

Divide the mixture into four glasses and refrigerate for at least 3 hours to set.

Toast the shredded coconut in a dry skillet until golden brown. Let it cool.
