500 grams fresh raspberries

a handful of fresh mint leaves

1. Place the raspberries, honey (or agave syrup), lemon juice, and half of the mint leaves in a blender.

3. Strain the puree to remove the seeds. This will result in a smoother sorbet.

4. Pour the puree into a deep dish and place it in the freezer.

5. Stir the mixture every hour with a fork, for about 4 hours, until it reaches the texture of sorbet.
