Refreshing Yogurt Pannacotta with Red Fruit
A light and refreshing dessert to end a delicious meal. This yogurt pannacotta is infused with vanilla and served with a strawberry and raspberry compote for a burst of sweetness. It's a delightful dessert to enjoy after an appetizing dinner.
Ingredients

500 ml full-fat yogurt

1 vanilla bean

3 gelatin leaves

100 grams sugar

200 grams strawberries

150 grams raspberries

2 tablespoons honey
Instructions

Soak the gelatin leaves in cold water.

Split the vanilla bean in half and scrape out the seeds.

In a saucepan, combine the yogurt, sugar, and vanilla seeds and heat over low heat. Do not let it boil!

Squeeze out the gelatin and add it to the yogurt mixture. Stir well until all the gelatin is dissolved.

Divide the yogurt mixture into 4 molds and let it set in the refrigerator for at least 4 hours.

For the compote, combine the strawberries, raspberries, and honey in a saucepan and bring to a boil. Let the mixture simmer until it thickens into a sauce. Let it cool.

Serve the pannacotta with the fruit compote. Enjoy!
