Richly Filled Vegetable Soup with Chicken and Whole Wheat Bread
A delicious, warm and filling soup perfect for lunch. The soup is rich in vegetables and contains tasty pieces of chicken. Served with a slice of whole wheat bread for extra fiber. Enjoy!
Ingredients

200 g chicken breast

2 carrots

2 stalks of celery

1 large onion

2 cloves of garlic

1 liter of chicken broth

400 g mixed vegetables (e.g. zucchini, bell pepper, leek)

4 slices of whole wheat bread

1 tablespoon of olive oil

Salt and pepper to taste

Finely chop the chicken breast, carrots, celery, onion, and garlic.

Heat the olive oil in a large soup pot and add the chicken breast. Cook until done.

Add the onion and garlic, and cook until the onion is translucent.

Next, add the carrots, celery, and mixed vegetables to the pot. Cook for about 5 minutes.

Pour the chicken broth into the pot and bring the soup to a boil. Let it simmer for about 20 minutes.

Season the soup with salt and pepper.

Serve the soup with a slice of whole wheat bread. Enjoy!
