Ingredients

  • 200 g chicken breast
  • carrots
  • stalks of celery
  • large onion
  • cloves of garlic
  • liter of chicken broth
  • 400 g mixed vegetables (e.g. zucchini, bell pepper, leek)
  • slices of whole wheat bread
  • tablespoon of olive oil
  •  Salt and pepper to taste

Instructions

  1. 1 Finely chop the chicken breast, carrots, celery, onion, and garlic.
  2. 2 Heat the olive oil in a large soup pot and add the chicken breast. Cook until done.
  3. 3 Add the onion and garlic, and cook until the onion is translucent.
  4. 4 Next, add the carrots, celery, and mixed vegetables to the pot. Cook for about 5 minutes.
  5. 5 Pour the chicken broth into the pot and bring the soup to a boil. Let it simmer for about 20 minutes.
  6. 6 Season the soup with salt and pepper.
  7. 7 Serve the soup with a slice of whole wheat bread. Enjoy!
