Ingredients

  •  Cauliflower Steaks: 2 large cauliflowers, 2 tablespoons olive oil, salt and pepper to taste
  •  Chimichurri Sauce: 1 bunch flat-leaf parsley, 4 cloves of garlic, 2 tablespoons red wine vinegar, 1 teaspoon salt, ½ teaspoon pepper, ½ teaspoon red pepper flakes, ½ cup olive oil

Instructions

  1. 1 Preheat the oven to 200 degrees Celsius. Cut the cauliflowers into thick 'steaks' about 2 cm thick.
  2. 2 Place the cauliflower steaks on a baking sheet. Brush both sides with olive oil and season with salt and pepper. Roast in the oven until golden brown and crispy, about 30 minutes.
  3. 3 While the cauliflower is roasting, make the chimichurri sauce. Put all the ingredients in a food processor and puree until smooth.
  4. 4 Serve the roasted cauliflower steaks warm, drizzled with the chimichurri sauce. Delicious with a fresh salad or roasted vegetables. No stress! If you have leftover sauce, save it for your sandwich the next day. Delicious!
