Roasted Cauliflower Steaks with Chimichurri Sauce
A delicious and healthy alternative to a traditional steak! These roasted cauliflower steaks are crispy on the outside and tender on the inside. They are perfectly complemented by a fresh, spicy chimichurri sauce. Just right for a tasty and nutritious dinner!
Ingredients

Cauliflower Steaks: 2 large cauliflowers, 2 tablespoons olive oil, salt and pepper to taste

Chimichurri Sauce: 1 bunch flat-leaf parsley, 4 cloves of garlic, 2 tablespoons red wine vinegar, 1 teaspoon salt, ½ teaspoon pepper, ½ teaspoon red pepper flakes, ½ cup olive oil

Preheat the oven to 200 degrees Celsius. Cut the cauliflowers into thick 'steaks' about 2 cm thick.

Place the cauliflower steaks on a baking sheet. Brush both sides with olive oil and season with salt and pepper. Roast in the oven until golden brown and crispy, about 30 minutes.

While the cauliflower is roasting, make the chimichurri sauce. Put all the ingredients in a food processor and puree until smooth.

Serve the roasted cauliflower steaks warm, drizzled with the chimichurri sauce. Delicious with a fresh salad or roasted vegetables. No stress! If you have leftover sauce, save it for your sandwich the next day. Delicious!
