Roasted Sweet Potato Soup with Grilled Chicken and Avocado

1 liter vegetable broth

Preheat the oven to 200 degrees Celsius.

Cut the sweet potatoes into cubes, place them on a baking sheet, and sprinkle with olive oil, salt, and pepper. Roast in the oven for 20 minutes.

While the sweet potatoes are roasting, grill the chicken breasts on both sides until fully cooked.

Finely chop the onion and garlic and sauté them in a large pan with a little olive oil.

Add the roasted sweet potatoes to the pan and pour the vegetable broth over them.
