  • chicken breasts
  • liter vegetable broth
  • cloves of garlic
  • onion
  • tablespoons of olive oil
  •  salt and pepper to taste

Instructions

  1. 1 Preheat the oven to 200 degrees Celsius.
  2. 2 Cut the sweet potatoes into cubes, place them on a baking sheet, and sprinkle with olive oil, salt, and pepper. Roast in the oven for 20 minutes.
  3. 3 While the sweet potatoes are roasting, grill the chicken breasts on both sides until fully cooked.
  4. 4 Finely chop the onion and garlic and sauté them in a large pan with a little olive oil.
  5. 5 Add the roasted sweet potatoes to the pan and pour the vegetable broth over them.
  6. 6 Let the soup simmer for 10 minutes, then puree with a hand blender until smooth.
