Roasted Sweet Potatoes with Hummus and Grilled Peppers
This colorful, filling, and delicious meal is packed with nutritious ingredients and flavors. The sweet potatoes are roasted until perfectly soft, then topped with rich hummus and juicy pieces of grilled peppers. An easy, but flavorful recipe that you can proudly serve at the table!

4 large sweet potatoes

2 red peppers

200 grams of hummus

2 tablespoons of olive oil

1 teaspoon of sea salt

1 handful of fresh parsley

Preheat the oven to 200 degrees Celsius.

Wash the sweet potatoes and cut them in half lengthwise. Place them on a baking sheet, drizzle with 1 tablespoon of olive oil and the sea salt.

Roast the sweet potatoes in the oven for 30-35 minutes, or until they are soft and golden brown.

While the sweet potatoes are in the oven, cut the red peppers into large pieces and grill them in a hot grill pan with 1 tablespoon of olive oil until they are soft and have some black edges.

Once the sweet potatoes are ready, remove them from the oven and spread the hummus over them. Place the grilled peppers on top and garnish with the fresh parsley. Enjoy your meal!
