Salmon Fillet with Roasted Peppers and Sweet Potato Puree

2 large sweet potatoes

Preheat the oven to 200°C. Cut the sweet potatoes into cubes and the peppers into strips.

Place the sweet potatoes and peppers in a baking dish, drizzle with olive oil and season with salt and pepper. Roast them in the oven for 20-25 minutes until soft.

While the vegetables are roasting, heat a skillet over medium-high heat. Season the salmon fillets with salt and pepper and cook for 3-4 minutes on each side until cooked through.

Once the sweet potatoes are cooked, mash them with a masher or fork until smooth.
