Preheat the oven to 200 degrees.

Peel the sweet potatoes and cut them into cubes. Place them in a pot with water and cook until tender.

While the sweet potatoes are cooking, cut the zucchinis and bell peppers into cubes. Place them on a baking sheet, drizzle with olive oil, add salt and pepper, and roast in the oven for 20 minutes.

Drain the sweet potatoes and mash them with a fork. Add a splash of olive oil, salt, and pepper for extra flavor.

Heat a splash of olive oil in a pan and fry the salmon fillets until golden brown on both sides. This takes about 3 minutes per side, depending on the thickness of the fillets.
