Ingredients

  • 200 g quinoa
  • chicken breasts
  • carrots
  • red bell pepper
  • cucumber
  •  Handful of cherry tomatoes
  • spring onions
  •  For the dressing:
  •  Juice of 1 lemon
  • tablespoons olive oil
  • teaspoon honey
  •  Salt and pepper to taste

Instructions

  1. 1 Cook the quinoa according to the instructions on the package and let it cool.
  2. 2 Grill the chicken breasts in a grill pan or on the barbecue until cooked through. Then slice them into strips.
  3. 3 Dice the carrots, bell pepper, and cucumber. Halve the cherry tomatoes and finely chop the spring onions.
  4. 4 For the dressing, mix the lemon juice, olive oil, honey, and salt and pepper to taste.
