Savory Quinoa Salad with Grilled Chicken and Fresh Vegetables
A deliciously filling and super healthy lunch that you can prepare in advance. This quinoa salad is filled with grilled chicken, fresh vegetables, and a zesty lemon dressing. The perfect balance of proteins, fibers, and vitamins!
Ingredients

200 g quinoa

2 chicken breasts

2 carrots

1 red bell pepper

1 cucumber

Handful of cherry tomatoes

2 spring onions

For the dressing:

Juice of 1 lemon

2 tablespoons olive oil

1 teaspoon honey

Salt and pepper to taste

Cook the quinoa according to the instructions on the package and let it cool.

Grill the chicken breasts in a grill pan or on the barbecue until cooked through. Then slice them into strips.

Dice the carrots, bell pepper, and cucumber. Halve the cherry tomatoes and finely chop the spring onions.

For the dressing, mix the lemon juice, olive oil, honey, and salt and pepper to taste.

Place the cooked quinoa in a large bowl, add the chopped vegetables and chicken strips. Pour the dressing over it and mix well.
