Spicy Italian Minestrone Soup

Ingredients

2 tablespoons olive oil

1 yellow onion, finely chopped

3 cloves of garlic, finely chopped

2 stalks of celery, diced

2 carrots, diced

1 red bell pepper, diced

1 can of red kidney beans, rinsed and drained

1 can of chopped tomatoes

1 liter of vegetable broth

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 teaspoon chili flakes

100 grams whole wheat pasta

2 handfuls of fresh spinach

Heat the olive oil in a large soup pot over medium-high heat.

Add the onion and garlic and cook until soft, about 5 minutes.

Add the carrots, celery, and bell pepper and cook for another 5 minutes.

Add the kidney beans, chopped tomatoes, vegetable broth, basil, oregano, and chili flakes and bring to a boil.
