  • tablespoons olive oil
  • yellow onion, finely chopped
  • cloves of garlic, finely chopped
  • stalks of celery, diced
  • carrots, diced
  • red bell pepper, diced
  • can of red kidney beans, rinsed and drained
  • can of chopped tomatoes
  • liter of vegetable broth
  • teaspoon dried basil
  • teaspoon dried oregano
  • 1/2 teaspoon chili flakes
  • 100 grams whole wheat pasta
  • handfuls of fresh spinach
  •  Salt and pepper to taste

Instructions

  1. 1 Heat the olive oil in a large soup pot over medium-high heat.
  2. 2 Add the onion and garlic and cook until soft, about 5 minutes.
  3. 3 Add the carrots, celery, and bell pepper and cook for another 5 minutes.
  4. 4 Add the kidney beans, chopped tomatoes, vegetable broth, basil, oregano, and chili flakes and bring to a boil.
  5. 5 Once boiling, add the pasta and let it simmer for 10 minutes.
