Ingredients

  • 400 g red lentils
  • large cauliflower, cut into florets
  • cloves of garlic, minced
  • large onion, sliced
  • tbsp curry powder
  • tsp turmeric
  • tsp cumin
  • 800 ml vegetable broth
  • 200 ml coconut milk
  • pieces of naan bread
  • tbsp olive oil
  •  salt and pepper to taste
  •  fresh coriander for garnish

Instructions

  1. 1 Heat the olive oil in a large pan over medium-high heat.
  2. 2 Add the onion and garlic and cook until soft.
  3. 3 Add the curry powder, turmeric, and cumin and stir well.
  4. 4 Add the red lentils and cauliflower florets, stir to coat everything well with the spice mixture.
  5. 5 Add the vegetable broth, bring to a boil, reduce heat and let it simmer for 20 minutes.
  6. 6 Add the coconut milk and let it simmer for another 10 minutes.
  7. 7 Season with salt and pepper.
  8. 8 Meanwhile, heat the naan bread according to the instructions on the package.
  9. 9 Serve the curry with the warm naan bread and garnish with fresh coriander. It will be just perfect!
