Spicy lentil soup
A delicious and healthy soup, full of flavor and easy to prepare. Ideal for a weekday evening!
Ingredients

1 can of lentils (400 grams)

1 large onion

3 cloves of garlic

1 red chili pepper

2 teaspoons cumin

1 teaspoon turmeric

1 liter vegetable broth

2 tablespoons olive oil

salt and pepper to taste
Instructions

1. Finely chop the onion, garlic, and red chili pepper. Don't stress, they don't have to be perfect!

2. Heat the oil in a large pan and add the onion, garlic, and red chili pepper. Cook until the onion is translucent.

3. Add the cumin and turmeric to the pan. Stir well. This adds extra flavor!

4. Then add the lentils and broth to the pan. Bring to a boil.

5. Let the soup simmer gently for about 20 minutes. This will make the lentils nice and soft.
