Spicy Thai Green Curry with Shrimp

400 g shrimp, peeled and cleaned

2 tablespoons vegetable oil

400 ml coconut milk

2 tablespoons Thai green curry paste

200 g sugar snaps

1 red bell pepper, sliced

1 onion, chopped

2 cloves of garlic, minced

1 lime, cut into wedges

Fresh cilantro, for garnish
Instructions

Heat the oil in a wok or large pan over medium-high heat.

Add the onion and garlic and cook until soft and fragrant.

Add the Thai green curry paste and cook briefly to release the flavors.

Add the coconut milk and bring to a boil.

Add the sugar snaps and bell pepper and let simmer for about 5 minutes.

Add the shrimp and cook until they are pink and cooked through, usually about 3-4 minutes.
