  • large sweet potatoes
  • cans black beans, drained
  • can corn, drained
  • can diced tomatoes
  • onion, finely chopped
  • cloves of garlic, minced
  • red bell pepper, diced
  • teaspoons cumin
  • teaspoon paprika
  • teaspoon chili powder
  • tablespoons olive oil
  •  salt and pepper to taste
  •  fresh cilantro, chopped (for garnish)

Instructions

  1. 1 Preheat the oven to 200 degrees and line a baking sheet with parchment paper.
  2. 2 Dice the sweet potatoes and place them on the baking sheet.
  3. 3 Roast the sweet potatoes in the oven until tender, about 20-25 minutes. Don't worry, they don't have to be perfect!
  4. 4 While the sweet potatoes are roasting, heat the olive oil in a large pan over medium-high heat.
  5. 5 Add the onion, garlic, and bell pepper to the pan and cook until soft.
