Spicy Vegan Chili with Sweet Potato

1 red bell pepper, diced

1 teaspoon paprika

1 teaspoon chili powder

2 tablespoons olive oil

Preheat the oven to 200 degrees and line a baking sheet with parchment paper.

Dice the sweet potatoes and place them on the baking sheet.

Roast the sweet potatoes in the oven until tender, about 20-25 minutes. Don't worry, they don't have to be perfect!

While the sweet potatoes are roasting, heat the olive oil in a large pan over medium-high heat.
