Spinach Frittata with Sweet Potato

200 grams fresh spinach

1 red onion

Preheat the oven to 180 degrees Celsius.

Peel the sweet potatoes and cut them into small cubes.

Finely chop the onion and garlic.

Heat the olive oil in an ovenproof skillet over medium-high heat, add the sweet potato, onion, and garlic and cook for about 10 minutes. This will enhance the flavor.
