Stuffed Avocado Boats with Turkey Salad

4 ripe avocados

400 grams turkey breast

1 red bell pepper

1 cucumber

1 red onion

2 tablespoons Greek yogurt

1 teaspoon mustard

Salt and pepper to taste

Cook the turkey breast in a pan with water until fully cooked. This takes about 20-25 minutes.

While the turkey is cooking, chop the bell pepper, cucumber, and red onion into small pieces.

Once the turkey is cooked, let it cool down. Then shred it with two forks until you have small pieces.

In a large bowl, mix the turkey, bell pepper, cucumber, and red onion. Add the Greek yogurt and mustard and mix well. Season with salt and pepper.
