Ingredients

  • 200 grams quinoa
  • 400 ml water
  • cucumber
  • 250 grams cherry tomatoes
  • red onion
  •  Handful of fresh mint
  •  Handful of fresh parsley
  •  Juice of 1 lemon
  • tablespoons olive oil
  •  Salt and pepper to taste

Instructions

  1. 1 Rinse the quinoa thoroughly under running water. This removes the bitter taste.
  2. 2 Put the quinoa in a pan with the water and bring to a boil. Let it simmer for about 15 minutes, or until all the water is absorbed. Let it cool down.
  3. 3 Meanwhile, cut the cucumber, cherry tomatoes, and red onion into small pieces.
  4. 4 Finely chop the mint and parsley.
  5. 5 In a large bowl, mix the cooled quinoa with the vegetables and herbs.
