Summer quinoa salad
A deliciously light and fresh salad, perfect for a summer lunch or dinner. This salad is packed with healthy ingredients and is also vegan and gluten-free. No stress if you've never cooked quinoa before - it's super easy and I'll explain exactly how to do it!
Ingredients

200 grams quinoa

400 ml water

1 cucumber

250 grams cherry tomatoes

1 red onion

Handful of fresh mint

Handful of fresh parsley

Juice of 1 lemon

2 tablespoons olive oil

Salt and pepper to taste

Rinse the quinoa thoroughly under running water. This removes the bitter taste.

Put the quinoa in a pan with the water and bring to a boil. Let it simmer for about 15 minutes, or until all the water is absorbed. Let it cool down.

Meanwhile, cut the cucumber, cherry tomatoes, and red onion into small pieces.

Finely chop the mint and parsley.

In a large bowl, mix the cooled quinoa with the vegetables and herbs.

Add the lemon juice and olive oil, and season with salt and pepper. Mix well and voilà, your salad is ready! You got this!
