Thai Chicken with Cashews and Vegetables
This is a delicious Thai classic packed with crunchy vegetables and tender chicken, finished with a spicy, sweet sauce and crispy cashews. It is quick and easy to prepare, and definitely a family favorite!
Ingredients

500 grams of chicken breast, diced

2 tablespoons of olive oil

1 red bell pepper, diced

1 yellow bell pepper, diced

1 onion, sliced

2 cloves of garlic, minced

1/2 cup of cashews

2 tablespoons of soy sauce

2 tablespoons of oyster sauce

1/2 teaspoon of red pepper flakes

1 tablespoon of honey

Optional: fresh cilantro and lime wedges

Heat the olive oil in a large pan over medium-high heat. Add the chicken and cook until golden brown and cooked through. Remove the chicken from the pan and set aside.

Add the onion, garlic, and bell peppers to the pan and cook until soft.

Add the cashews, soy sauce, oyster sauce, red pepper flakes, and honey to the pan. Stir everything together.

Add the cooked chicken back to the pan and mix everything together, making sure the chicken is well coated with the sauce.
