400 g Shrimp, peeled and cleaned

2 Tablespoons green curry paste

1 Can coconut milk (400ml)

1 Broccoli, cut into florets

2 Red bell peppers, diced

1 Onion, finely chopped

2 Cloves of garlic, minced

2 Tablespoons coconut oil

1 Handful of fresh cilantro, chopped

Rice, of your choice

1. Heat the coconut oil in a large pan and sauté the onion and garlic until soft.

2. Add the green curry paste and stir-fry for a few minutes with the onion and garlic.

3. Then add the coconut milk and bring to a boil.

4. Add the broccoli and bell peppers and let simmer for 10 minutes.
