Tofu in Spicy Peanut Sauce

500 grams tofu

2 tablespoons olive oil

For the sauce:

4 tablespoons peanut butter

2 tablespoons soy sauce

1 tablespoon sambal oelek (or less if you don't like spicy)

200 ml coconut milk

1 clove of garlic, minced

1 lime, juiced

Cut the tofu into cubes and pat dry with kitchen paper.

Heat the oil in a pan and fry the tofu cubes on all sides until golden brown and crispy. This takes about 10 minutes. Set aside.

For the sauce, mix the peanut butter, soy sauce, sambal oelek, coconut milk, garlic, and lime juice in a pan over medium heat. Stir well until a creamy sauce forms.

Add the fried tofu to the sauce and stir well to coat all the cubes with the sauce.

Let simmer for another 5 minutes, stirring occasionally to prevent burning.
