Tomato Soup with a Twist
A delicious, homemade tomato soup with a fresh and spicy twist. Perfect for a cozy dinner or as a warming lunch. Even if you've never made soup before, this will turn out great!
Ingredients

1 kg ripe tomatoes

1 large onion

2 cloves of garlic

1 red bell pepper

1 tablespoon olive oil

1 liter vegetable broth

1 tablespoon tomato paste

1 teaspoon sugar

salt and pepper to taste

handful of fresh basil
Instructions

1. Cut the tomatoes, onion, garlic, and bell pepper into pieces.

2. Heat the olive oil in a large pan. Add the onion and garlic and cook until soft. Don't stress, it doesn't have to be perfect!

3. Add the tomatoes, bell pepper, tomato paste, and sugar. This will give a delicious deep flavor to your soup.

4. Add the vegetable broth and bring to a boil. Let it simmer for 15 minutes.

5. Puree the soup with an immersion blender until smooth. Add salt and pepper to taste.
