Traditional Italian Minestrone Soup

Ingredients

  • tablespoon olive oil
  • onion, finely chopped
  • carrots, peeled and finely chopped
  • stalks of celery, finely chopped
  • cloves of garlic, finely chopped
  • zucchini, diced
  • red bell pepper, diced
  • 400 grams canned tomatoes
  • liter vegetable broth
  • 400 grams cannellini beans, rinsed and drained
  • 100 grams fresh spinach, roughly chopped
  •  Salt and pepper to taste
  •  Grated Parmesan cheese for serving

Instructions

  1. 1 Heat the olive oil in a large pot over medium-high heat. Add the onion, carrots, celery, and garlic and sauté until the vegetables are soft, about 5 minutes.
  2. 2 Add the zucchini and red bell pepper and cook for another 5 minutes.
  3. 3 Add the tomatoes and vegetable broth. Bring the soup to a boil and let it simmer for 20 minutes.
  4. 4 Add the cannellini beans and spinach. Cook for another 5 minutes, until the spinach is wilted.
  5. 5 Season the soup with salt and pepper. Serve it hot, garnished with Parmesan cheese. Don't stress! It will be fine!
