Traditional Italian Minestrone Soup
A delicious, rich minestrone soup full of fresh vegetables and beans. This soup is a perfect way to enjoy a meat-free meal while still getting plenty of protein and fiber. And best of all, it's easy to make and super healthy!
Ingredients

1 tablespoon olive oil

1 onion, finely chopped

2 carrots, peeled and finely chopped

2 stalks of celery, finely chopped

3 cloves of garlic, finely chopped

1 zucchini, diced

1 red bell pepper, diced

400 grams canned tomatoes

1 liter vegetable broth

400 grams cannellini beans, rinsed and drained

100 grams fresh spinach, roughly chopped

Salt and pepper to taste

Grated Parmesan cheese for serving
Instructions

Heat the olive oil in a large pot over medium-high heat. Add the onion, carrots, celery, and garlic and sauté until the vegetables are soft, about 5 minutes.

Add the zucchini and red bell pepper and cook for another 5 minutes.

Add the tomatoes and vegetable broth. Bring the soup to a boil and let it simmer for 20 minutes.

Add the cannellini beans and spinach. Cook for another 5 minutes, until the spinach is wilted.

Season the soup with salt and pepper. Serve it hot, garnished with Parmesan cheese. Don't stress! It will be fine!
