  • large red bell peppers
  • cup whole grain rice
  • can black beans, drained
  • can sweet corn, drained
  • cloves garlic, minced
  • onion, finely chopped
  • teaspoon cumin
  • teaspoon paprika
  • 1/2 teaspoon chili powder (optional)
  • 1/2 cup shredded cheddar cheese
  •  Olive oil
  •  Salt and pepper to taste

Instructions

  1. 1 Preheat the oven to 200 degrees Celsius.
  2. 2 Cook the whole grain rice according to the package instructions.
  3. 3 Meanwhile, cut the tops off the peppers and remove the seeds. Place them in a baking dish.
