  • small tortillas
  • red peppers
  • can black beans (400g)
  • ripe avocado
  •  Juice of 1 lime
  • clove of garlic
  •  A handful of fresh coriander
  •  Salt and pepper to taste
  • tablespoons of olive oil

Instructions

  1. 1 Preheat the oven to 200 degrees Celsius.
  2. 2 Slice the peppers into strips and place them on a baking sheet. Drizzle with olive oil, salt, and pepper. Roast them in the oven for 20 minutes.
  3. 3 Rinse the black beans and heat them in a pan over medium heat.
  4. 4 Meanwhile, make the avocado sauce. Blend the avocado, lime juice, garlic, and coriander in a blender until smooth. Season with salt and pepper.
