Vega Tacos with Grilled Peppers and Black Beans
These delicious Vega Tacos are packed with flavor and are a healthy alternative to traditional meat tacos. The combination of grilled peppers, black beans, and a fresh lime-avocado sauce is finger-licking good. Plus, they are super easy to make. So, no stress!
Ingredients

8 small tortillas

2 red peppers

1 can black beans (400g)

1 ripe avocado

Juice of 1 lime

1 clove of garlic

A handful of fresh coriander

Salt and pepper to taste

2 tablespoons of olive oil

Preheat the oven to 200 degrees Celsius.

Slice the peppers into strips and place them on a baking sheet. Drizzle with olive oil, salt, and pepper. Roast them in the oven for 20 minutes.

Rinse the black beans and heat them in a pan over medium heat.

Meanwhile, make the avocado sauce. Blend the avocado, lime juice, garlic, and coriander in a blender until smooth. Season with salt and pepper.

Heat the tortillas in a dry skillet or in the microwave.

Now it's time to fill the tacos. Start with the black beans, then add the grilled peppers, and finally a spoonful of avocado sauce. That's all there is to it!
