Vegan Buckwheat Pancakes with Caramelized Apple
These delicious vegan buckwheat pancakes are not only quick and easy to make, but also incredibly healthy. The caramelized apple adds a sweet twist to this recipe. Perfect for breakfast or lunch!
Ingredients

200 g buckwheat flour

2 eggs

500 ml almond milk

1 pinch of salt

2 apples

2 tablespoons honey

1 teaspoon cinnamon

Coconut oil for frying
Instructions

1. Mix the buckwheat flour, eggs, almond milk, and a pinch of salt in a bowl until smooth batter forms.

2. Slice the apples thinly.

3. Heat a little coconut oil in a frying pan and fry the apple slices until soft.

4. Add the honey and cinnamon to the apples in the pan and let caramelize for another 2 minutes.

5. Meanwhile, heat another pan with a little coconut oil and spoon some batter in, fry the pancake until golden brown on both sides.
