  • 340 grams whole wheat pasta
  • tablespoons olive oil
  • zucchini, sliced
  • red bell pepper, sliced
  • yellow bell pepper, sliced
  • bunch asparagus, ends trimmed and cut into pieces
  • cup cherry tomatoes
  • cloves garlic, minced
  •  Salt and black pepper to taste
  • teaspoon dried Italian herbs
  • 1/2 cup grated Parmesan cheese

Instructions

  1. 1 Cook the pasta according to the package instructions. Reserve a cup of pasta water.
  2. 2 Heat the olive oil in a large skillet over medium-high heat.
  3. 3 Add the zucchini, bell peppers, and asparagus to the skillet. Cook until they are tender and lightly golden, about 5 minutes.
  4. 4 Add the cherry tomatoes, garlic, salt, pepper, and Italian herbs. Cook for another 5 minutes.
