Vegetarian Vegetable Curry
A warming and nutritious vegetarian curry bursting with flavor! With a rainbow of vegetables, this dish is not only a delight for the stomach but also for the eyes. Perfect for a cozy family dinner!
Ingredients

400 g chickpeas (canned, drained)

1 large zucchini

2 carrots

1 red bell pepper

1 yellow bell pepper

1 large onion

3 cloves of garlic

1 tablespoon curry powder

1 teaspoon turmeric

400 ml coconut milk

2 tablespoons olive oil

Salt and pepper to taste

Fresh coriander (optional, for garnish)
Instructions

Heat the olive oil in a large pan over medium-high heat.

Finely chop the onion and garlic and add them to the pan. Cook until soft and fragrant.

Add the curry powder and turmeric and stir well.

Cut the zucchini, carrots, and bell peppers into pieces and add them to the pan. Stir well and cook for 5 minutes.

Add the chickpeas and coconut milk. Bring to a boil and then simmer over low heat for 15-20 minutes.
