Ingredients

  • 400 g chickpeas (canned, drained)
  • large zucchini
  • carrots
  • red bell pepper
  • yellow bell pepper
  • large onion
  • cloves of garlic
  • tablespoon curry powder
  • teaspoon turmeric
  • 400 ml coconut milk
  • tablespoons olive oil
  •  Salt and pepper to taste
  •  Fresh coriander (optional, for garnish)

Instructions

  1. 1 Heat the olive oil in a large pan over medium-high heat.
  2. 2 Finely chop the onion and garlic and add them to the pan. Cook until soft and fragrant.
  3. 3 Add the curry powder and turmeric and stir well.
  4. 4 Cut the zucchini, carrots, and bell peppers into pieces and add them to the pan. Stir well and cook for 5 minutes.
  5. 5 Add the chickpeas and coconut milk. Bring to a boil and then simmer over low heat for 15-20 minutes.
  6. 6 Season with salt and pepper and serve with fresh coriander.
