Ingredients

  • 300 grams whole wheat spaghetti
  • 500 grams fresh, washed spinach
  • 400 grams large, peeled shrimp
  • cloves of garlic, minced
  • organic lemon, juice and zest
  • tablespoons olive oil
  •  Ground black pepper and salt to taste
  • 50 grams grated Parmesan cheese

Instructions

  1. 1 Bring a large pot of water with a pinch of salt to a boil. Add the spaghetti and cook according to the package instructions. Drain and set aside.
  2. 2 Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the garlic and cook until fragrant but not browned.
  3. 3 Add the shrimp and cook until they are pink and cooked through. Remove them from the pan and set aside.
