Ingredients

  • large red peppers
  • 150 g quinoa
  • 200 g feta cheese
  • zucchini
  • onion
  • cloves of garlic
  • can of chickpeas (400g)
  • bunch of fresh parsley
  • tbsp olive oil
  •  salt and pepper to taste

Instructions

  1. 1 Preheat the oven to 200 degrees Celsius.
  2. 2 Cut the tops off the peppers and remove the seeds. Place the peppers on a baking sheet.
  3. 3 Finely chop the onion, zucchini, and garlic. Sauté them in a pan with the olive oil until soft.
  4. 4 Meanwhile, cook the quinoa according to the instructions on the package.
  5. 5 Add the chickpeas, feta, and half of the parsley to the pan. Season with salt and pepper.
  6. 6 Fill the peppers with the quinoa mixture.
  7. 7 Bake the peppers in the oven for 15-20 minutes, or until soft.
  8. 8 Garnish the peppers with the remaining parsley before serving. Enjoy!
