Chef's Special: Stuffed Peppers with Quinoa and Feta

4 large red peppers
150 g quinoa
200 g feta cheese
1 zucchini
1 onion
2 cloves of garlic
1 can of chickpeas (400g)
1 bunch of fresh parsley
2 tbsp olive oil
salt and pepper to taste

Instructions
1Preheat the oven to 200 degrees Celsius.
2Cut the tops off the peppers and remove the seeds. Place the peppers on a baking sheet.
3Finely chop the onion, zucchini, and garlic. Sauté them in a pan with the olive oil until soft.
4Meanwhile, cook the quinoa according to the instructions on the package.
5Add the chickpeas, feta, and half of the parsley to the pan. Season with salt and pepper.
6Fill the peppers with the quinoa mixture.
7Bake the peppers in the oven for 15-20 minutes, or until soft.
8Garnish the peppers with the remaining parsley before serving. Enjoy!
