Colorful Couscous Salad with Grilled Halloumi
A light, nutritious, and delicious lunch bursting with flavor! This colorful couscous salad with grilled halloumi is perfect for recharging for the rest of the day. It's quick and easy to prepare, so no stress! This is one of my favorite recipes when I'm in the mood for something fresh and nutritious.
Ingredients

200 grams couscous

400 ml vegetable broth

1 red bell pepper

1 cucumber

200 grams cherry tomatoes

1 bunch of spring onions

200 grams halloumi

2 tablespoons olive oil

Juice of 1 lemon

Fresh mint and parsley, finely chopped

1. Prepare the couscous according to the instructions on the package with the vegetable broth.

2. Meanwhile, cut the bell pepper, cucumber, cherry tomatoes, and spring onions into small pieces.

3. Slice the halloumi and grill in a hot grill pan until golden brown.

4. Mix the cooked couscous with the chopped vegetables, lemon juice, olive oil, fresh herbs, salt, and pepper.
