2 cups oats
1.5 cups unsweetened almond milk
2 large eggs
1 teaspoon baking powder
pinch of salt
1 teaspoon vanilla extract
1 cup fresh blueberries
maple syrup for serving

Instructions
1Place the oats in a blender and blend into a fine flour.
2Add the almond milk, eggs, baking powder, salt, and vanilla extract to the blender and mix until smooth batter forms.
3Heat a little oil in a large skillet over medium heat.
4Scoop a spoonful of batter into the skillet and sprinkle a few blueberries on top.
5Cook the pancake until the bottom is golden brown and the top starts to bubble, about 3-4 minutes. Then flip and cook the other side for another 2-3 minutes. Repeat with the remaining batter.
