400 ml almond milk
2 eggs
1 tablespoon honey
1 teaspoon baking powder
Pinch of salt
200 grams fresh blueberries
Coconut oil for frying
Optional: Greek yogurt and extra honey for topping

Instructions
1Mix the whole wheat flour, baking powder, and salt in a large bowl.
2Add the eggs, almond milk, and honey and mix the batter until smooth and lump-free.
3Stir the blueberries into the batter.
4Heat a little coconut oil in a frying pan.
5Scoop some batter into the pan with a ladle and fry the pancake until golden brown on both sides.
6Repeat until all the batter is used.
7Serve the pancakes with some Greek yogurt and a little extra honey. Enjoy!
